Originating from Jeollanam-do, Korea, Chef Sungchul Shim nurtured his culinary passion in family kitchens before honing his skills in esteemed restaurants like Le Bernardin and Per Se.
In 2019, he unveiled Kochi, earning a Michelin star for his refined take on Korean skewered dishes. His subsequent venture, Mari, a handroll-focused restaurant in Hellโs Kitchen, also garnered Michelin acclaim.
Expanding his culinary reach, Chef Shim recently introduced Don Don, offering a delectable range of Korean BBQ, and Marine, a casual venue spotlighting the richness of Korean rolls. Sungchulโs journey represents his unceasing pursuit of culinary innovation and his commitment to sharing the intricate flavors of Korean cuisine with the world.

Chef Sung is joined by long-time partner Chef Byeongseok Lee as his chef de cuisine at Don Don, who has worked alongside him for more than a decade, including as chef de cuisine at Kochi. Prior to joining Sung on his restaurants, Byeongseok was the executive chef at Neta, and also worked in award-winning kitchens including Commerce under Harold Moore, and David Burke Townhouse.
